Danish Pancake Puffs are traditional ball-shaped pancakes from Denmark. The secret to successful æbleskiver is the cast iron pan that they are cooked in. The pan, which is often called a “monk pan” contains several round indentations (or wells) for the batter to fry in. When baked the result is a pancake ball with a beautiful golden brown, crispy texture and a light fluffy, sweet taste on the inside.

The beauty of these little “pancake puffs” is that they are as versatile as the cook who creates them, offering an opportunity to pair them with any fruit, cream, sugar or spice. In fact, the name æbleskiver (pronounced AB-el-ski-wyr) literally means “apple slices” in Danish because the traditional way of cooking them was to turn a piece of apple slice in the pancake mix while cooking and served with freshly stewed fruit.

Baking instruction: Preheat your fan forced oven to 200°C, traditional oven 230°C. Add a small tray of water to the bottom of the oven and pop the product straight from the freezer and bake for approximately 10 minutes. Dust lightly with icing sugar and serve with a dollop of cream, jam, maple syrup or honey – the perfect treat every time.
